St Patrick's Day Jelly Cups

Now let's get one thing straight. Just because I'm not Irish, it doesn't mean that I am not lucky nor does it mean that I can not celebrate St Patrick's Day.

Luckily for me, St Patrick's Day seems to have transcended international borders and emigrated all the way to Australia. This is the day when you see grown men dressed as leprachauns and in a horridly drunken state promising to give you their pot of gold at the end of the rainbow. Now I don't know about you, but that just sounds creepy to me. I most certainly do not want anything at the end of your rainbow!

Thankfully it is also the day where Irish food is celebrated. As the 17th of March falls on a Sunday here in Australia, an excellent way of celebrating might include making some Irish flag jellies (complete with their own gold coin). Plus you can make two different types... one tamer version for the children and another alcoholic version for the adults! Perfect.
